Ingredients

- 1 tablespoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 9 oz refrigerated cheese tortellini
- 2 cups chopped fresh spinach
- 1 cup frozen mixed vegetables
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt, plus pepper to taste
- Grated Parmesan, for serving
How to Make It

- Heat the oil in a pot over medium heat and cook the onion 3 minutes until soft.
- Add the garlic and cook 30 seconds until fragrant.
