How long leftovers are actually good for

What matters more than the number is how fast the food cooled. Food left on the hob to cool for four hours has used most of its margin before it was ever put away.

The one rule worth keeping at 8:30 is that reheated food should be steaming hot all the way through, not warm on the outside.
Microwaves heat unevenly, which is exactly the failure mode a tired parent will not notice.

- Heat until it is genuinely steaming, then let it stand a minute.
- Portion before reheating rather than after.

- Warming a big dish through once and serving from the middle.

- Leaving the container on the counter through practice.
- Relying on a smell test for something four days old.
When leftovers stop being appealing
The third night of the same chilli is where a good system dies. Change one thing rather than the whole meal: put it in a wrap, put it on rice instead of pasta, add something crunchy.
Freezing half on the first night is the cleanest fix, because the same meal a fortnight later feels new.
